Best food I had in Croatia (big statement given that food is great here). They are very close to the fish market and serve only fish (no meat nor veg option). They have an amazing tasting menu, but you can also other a la carte (if you have to choose one dish, order the skate fish). I recommend making a reservation as they don't have many sits available. Imaju nevjerojatan degustacijski meni, ali možete i druge a la carte (ako morate odabrati jedno jelo, naručite skate fish). Preporučam da rezervirate jer nemaju puno slobodnih mjesta.

Really an amazing restaurant and a fantastic fine dining experience. The chef and the staff earned their praise and the mentioning in the Gault Millau 2022 Croatia. The food was from the beginning to the end simply perfection and I can highly recommend trying out this restaurant if you get the chance. Best meal in Croatia. If you are looking for something beyond pasta, risotto and you are a fish lover, this is a highly recommended restaurant. Excellent service and amazing food. We went a la carte and ordered 2 cold dishes and 2 warm all wonderfully presented. My personal faves were the poached calamari and the hake fish. PiNKU fish&wine is an extraordinary restaurant. The tuna tartare with tomato sauce, capers and lemon jam, dehydrated egg yolk was the first highlight on the menu. The poached hake fish is served with cuttlefish noodles, pickled egg, spring onion and fish broth was great. The burned sea bass was extraordinary. It's served with tuna mayonnaise and wild salad. We choose the tasting menu and it was truly amazing. The plates were really (extremely) good and the waiter was perfect, he explained every plates and enjoyed sharing anecdotes about the making of the dishes. He even offered us a self-made shot. Absolute little gem of a restaurant that we discovered by accident, when looking for a late lunch. We had our lunch which was simply out if this world, the squid and the sea bass, so good that we instantly booked in for an evening meal on our last day. Everything about this restaurant screams class, the food, the setting but most of all the fantastic, attentive and fun friendly staff, from watching the chefs meticulous preparation of your food to sampling the first class paired wines and drinks, to a taste of food you'll never forget, unless like us you order the tasting menu, (which I'd recommend you do), where each course manages to surpass the previous. Great dinner at PiNKU! Fish like you never experienced before! The species are local (we had to google them haha) and are cooked in a modern way and with a twist! The portions are quite small BUT it is SO GOOD that actually it does not matter, and our four dishes (+ the most amazing home made chocolate) were sufficient! We had only one night in Split and we were trying to find something special and memorable for dinner (without reservation as usual for us :). PiNKU was fully booked but one of the most charming man offered us to squeeze us having a seat for 50min. He called himself „only the bartender“ but we are almost sure that he runs the place! The food was exciting, intense, creative, unique and all ingredients were well explained. It is a place where food meets art and future thoughts. Outstanding fish tasting menu with paired wines and spirits. Not inexpensive, but absolutely on par with a Michelin star experience! If you want to experience culinary fireworks and taste fish in a way you’ve probably never tasted before, consider giving this place a go. We had the tuna and raža, and both of them were creative, unique and tasty dishes, with a nice choice of white wine to complement the flavour. If you’re interested in a restaurant that pays tribute to local fresh fish and zero distractions, you have come to the right place. Solid 4 stars and certainly among the best dining options around the Palace. We ordered the tasting menu that with a price tag of 700 Kuna for 2 people is very well priced. Overall, the concept and food reminded us of much loved and noma affiliated Iluka in Copenhagen just at a significantly lower price which is a huge plus. We loved the fact that fish was sourced from the market next door, that ferments were integrated to give salads an extra twist and that different textures and techniques were used throughout the menu. We could see that every dish expressed an unique idea/vision of the talented Chef. Overall, food was good but lacked a bit of umami/ flavor explosions that I hoped for. For example, the fish broth was rather flat and could have been further enriched for example with a dashi. In addition, we had the same pea flavors in two out of 5 dishes.
